Paiche – also known as pirarucu – is considered the true king of the Amazon. It is one of the largest freshwater fish in the world, reaching lengths of up to 4.5 metres and weighing over 200 kilograms. Its firm, white flesh is delicate in taste, versatile in preparation and often compared to halibut or Chilean sea bass.
